How reliable is the column detection?

A PDF does not store tables — it stores text at coordinates. Columns are found by clustering the positions where text starts, which works well for ruled or strictly aligned tables like bank statements, price lists and exported reports. Merged cells, nested tables and description columns that wrap onto several lines are where it struggles, so always open the result and check it.

Can I use the numbers in formulas?

Yes. Anything that reads as a plain number is written into the sheet as a number, so sums and averages work straight away. Values carrying a currency symbol or thousands separator stay as text.

Nothing was extracted.

The PDF is a scanned image, so there are no characters to measure. That needs OCR, which this tool does not perform.

The whole page came out in one column.

The text is probably not aligned into real columns, so there is no table to find. If it genuinely is a table, raise the sensitivity and try again.
